Mizudashicha is a Japanese green tea prepared with cold water. This method, known as "mizudashi", meaning "cold water extraction", allows for the preparation of various tea types, such as Sencha, Wakoucha, Genmaicha, or Houjicha. The tea is steeped in cold water, resulting in a refreshing beverage with a gentle sweetness and low bitterness. The outcome is a pleasantly cool and aromatic drink, particularly popular during the summer months for its ability to refresh without the need for added sugar.

The Calm of Morning
Hiroshi was always busy, always rushing. But one morning, waking too early, he finally had time for himself. In the fridge, he noticed a bottle of cold-brewed sencha. The first sip surprised him with its tenderness, sweet freshness. He sat on the balcony, watching the sunrise and drinking tea. That day he missed nothing. As his grandfather once told him: “Sencha is like morning, if you don’t taste it slowly, you don’t taste it at all.”
