Gently sift 2 grams of matcha into a cup to prevent clumping. Then, add 70 ml of hot water (not boiling, around 80°C) and whisk with a chasen (bamboo whisk) in an "W" motion until a creamy froth forms.

I was perhaps seven years old. The streets of Kyoto were wet with the soft spring rain that only Uji knows. My grandmother sat me down on the wooden step in front of her tea room, my clothes muddy from play. In her hands, she held a small bowl, inside, one of the most precious things I would ever taste: Ceremonial Matcha. “This is not tea for thirst, ” she whispered. “This is tea for listening.” I watched her trembling but skillful hand whisk powder into hot water. Everything grew still. The rain, the birds, even my restless legs. The first sip was warm, velvet, grassy. My grandmother’s gaze drifted outward, not at me but at the rain. That day I learned: good tea does not only grow from the soil, it grows from memory.
