Culinary Matcha is derived from the Yabukita variety, the most widely grown variety in Japan. Sift 2-4 grams of matcha into a cup through a sieve to prevent lumps. Then add 70 ml of hot water (not boiling, about 80°C) and beat with a whisk (chasen) in the shape of the letter "M" or "W" until a creamy foam is formed. For various culinary creations such as cocktails, smoothies or desserts, a more concentrated mixture can be prepared by adding more matcha.
