Gyokuro is one of the most prestigious types of Japanese green tea, known for its unique cultivation and distinctive taste. Its name, meaning "precious dew," reflects the care required in its cultivation and the preciousness of every drop of this prestigious beverage. The tea plants are shaded for three weeks before harvesting, which slows photosynthesis and increases the L-theanine content in the leaves. The result is a tea with a distinct umami flavor, rounded off by a mild sweet aftertaste. Gyokuro is known for its sweet, creamy texture and rich umami tones. Preparation instructions

The traditional preparation of Gyokuro tea involves using water at a temperature of 50–60 °C. For 50 ml of water, 3 grams of tea are used. The tea is steeped until the leaves open, subsequent infusions are shorter. The tea is served in small cups to enjoy its rich umami flavor.

Prvi okus zelene tišine

Spomnim se, bil sem star morda sedem let. Zunaj je deževalo nežno in počasno, kot zna deževati le v pozni pomladi v Ujiju. Babica me je posedla na leseno stopničko pred svojo čajno sobo, še ves v blatu od igre med čajnimi grmi. V rokah je držala skledo, v njej pa – takrat še nisem vedel – eno najbolj dragocenih stvari, kar sem jih kdaj okusil: ceremonialno matcho Okumidori.

»To ni čaj za žejo,« je rekla tiho. »To je čaj za poslušanje.«

Opazoval sem, kako s tresočo, a spretno roko meša prah z vročo vodo. Vse se je umirilo. Dež, ptice, celo moje noge. Ko sem naredil prvi požirek, je bil grenek – ampak pod grenkobo je bilo nekaj toplega. Nekaj mehko travnatega, žametnega. In potem sem opazil: babičin pogled ni bil usmerjen vame, temveč ven, proti čajnim listom, ki so se premikali v vetru. Kot da pije njih.

Od takrat vem: dober čaj ne raste le iz zemlje – raste iz spomina.
